Nature Mite & the Difference Between Folate & Folic Acid

On a recent trip to visit my mum in Byron Bay we went to a café where my mum ordered toast with this wholefood version of vegemite & I knew I had to recreate it. Vegemite is a staple in many Australian homes as a breakfast spread.  While there several undesirable ingredients in Kraft Vegemite & similar brand alternatives one of the biggest reasons to avoid it is folic acid. The methylation cycle is a vital cycle happening in the cells & tissue throughout the body &is a vital process from a genetic & metabolic perspective. Interruptions in this process can contribute the development of all most every disease state imaginable. While there are many nutrients that contribute to the function of this cycle, folate is one of the most significant factors needed for methylation. Many people & even health professionals use the terms folate & folic acid interchangeably; however, they are far from equal. We get folate from foods like nutritional yeast, green vegetables, mushrooms, liver, nuts, legumes, dates, avocado, & dried figs. Unfortunately, a lot of foods found at the supermarket are fortified with folic acid. Folic acid is a synthetic form of folate & it does not behave the same way in the body as natural folate from food. Folic acid interrupts our methylation cycle & can be a contributor to many disease states. This is a major reason to avoid food like vegemite, bread, cereals & other packaged baked goods.

 

This whole food version made with black tahini & nutritional yeast has all the nutrients that are listed in vegemite, but the nutrients are in their natural form, as we are nature, we can assimilate these nutrients & thrive. This version contains B vitamins & folate and unlike regular vegemite it also contains iron, calcium, zinc, magnesium & protein. This spread had the same umami punch as vegemite & in my opinion is much much tastier. 

 

Nature Mite Spread

 

Ingredients

 

2 cup black tahini ***see note

4 tbsp tamari sauce

2.5 tbsp nutritional yeast

1 tbsp apple cider vinegar

¾ tbsp maple syrup

 

Directions

Blitz the nutritional yeast on its own first for ten seconds, this will ensure a smooth paste. Add the rest of the ingredients & blend until smooth. Serve as you would regular vegemite. Store in a glass jar in the fridge for up to two months.
